How many LoRa channels required by Meshtastic for proper functioning?

do you mean in hardware on the radio? only one.
If you mean frequency bands, that varies by region, but depending on the channel hash it will pick one of about 10 bands.
I mean, as example, if only 2 LoRa channels fits to the allowed part of spectrum in our region, will it be enough for meshtastic?
Sure. See radiointerface.cpp for examples or open a bug with a two letter code and frequency range and I can put something in. Ideally 200khz for each channel would be available. The minimum is one channel.
Whats fine. We here have place for 2 channels in 100mW 10% duty cycle part of spectrum.
And we need to fix EU bandplan, current version violates not only power, but duty cycle and purpose requirements to. I will make corrections in 1 or 2 days.
