Is it possible to attach a chain of these devices to extend the range of a drone with minimal latency?
They are low bandwidth, are you wanting to send video?
yes, as high quality video as possible. do you know of anyone doing this already?
LoRa is low throughput, low data rate and high latency (at least something high). Non of these meets requirements for real time video transmission 
If you are looking into drone video transmission with good range, check out Open HD, it’s another great project like Meshtastic but a different concept. It’s using long range wifi video transmission (up to 74 km!)
