Do all nodes need to be on the same version

Do all the nodes need to be on the same version, because some of them wont have a phone connected to them and if they update on the ones with phones do they still work together?

Nope, you can run different firmware versions on the same network.

Best to be in the same firmware family … eg

1.0.x
1.1.x
1.2.x

Within the family, the latest is always best but they all should work – we don’t actually test for it, but we try to keep compatibility.
